Wildgame Recipes: Sweet and Sour Duck
If you are like me and you love a good steak then you are going to enjoy this one. Venison Steak Bites with Garlic Butter is a go to for me with my deer every year. You won’t be disappointed in this one for sure!
Duck
Sweet and Sour Duck
1/2 Cup of Flour
1/4 Cup of Cornstarch
1/4 tsp. Baking Powder
1/4 tsp. Salt
1 1/4 Cup of Water
1lb of Duck Cut Into 1” chunks
Vegetable Oil
1/4 Cup Sesame Seeds
Sweet and Sour Sauce
3/4 Cup of Catsup
1/4 Cup White Vinegar
1 Cup Juice from Canned Pineapple Chunks
3 Tablespoons of Sugar
1/2 Cup of Onion Slices
1 Cup Green Pepper Chunks
1 Tablespoon Cornstarch Blended with 3 Tablespoons of Water
1 Cup Canned Pineapple Slices
Mix you flour, cornstarch, baking powder, salt and water in a bowl and stir until the batter is consistently a thin stream. Next heat vegetable oil in a pot and reaches 375 degrees. Take duck chunks and deep into batter and place into the hot oil. Fry them for 12 minutes then reduce the heat and fry again for an additional 10 minutes or until done. Place them on a paper towel and dry. Start by making your Sweet and Sour Sauce. Mix in a bowl you catsup, vinegar, pineapple juice, and sugar. After mixing well pour into a preheated large skillet and bring to a boil. Add onion slices and green peppers and stir for 3-4 minutes. When its back to boiling add cornstarch an stir in allowing it to continue to boil. Lastly add your pineapple, sesame seeds, and duck meat. Stir in covering pinnaple and meat generously in sweet and sour sauce. This will easily serve four. Great served with rise or your favorite asian noodle.
