Wildgame Recipes: Stuffed Elk Tenderloin

Maybe the best wild game meat in all of North America in my opinion is the elk tenderloin. There are lots of ways to prepare it but this stuffed elk tenderloin is mouth watering good! And its enough to feed 4 to 6 people!

Stuffed Elk Tenderloin

INGREDIENTS

2 1/2 LB Elk Tenderloins (can be substituted for lower end backstrap)

1 Lb Smoked Sausage

1 Medium Onion, Sliced

1 Green Pepper, Sliced

1 Clove Garlic, Chopped

Use a sharpening steel and make a length wise hole through the tenderloins. Take your sausage and thread it through your tenderloin. If the sausage is still frozen refrigerate until sausage is thawed. Take the tenderloin and pan sear it on all sides. Next place it in a roasting pan, cover with onions, green peppers, and garlic then roast covered at 350 degrees for 20 minutes for each pound of meat. Serves 4 to 6 people.
